I love the summertime weather we’ve been having. It’s been so nice spending time outside. I’ve really been trying to get my meals prepped early in the day—or early in the week. I’ve also been trying to keep my cooking on the grill or stovetop on the really warm days. Salad are also a mainstay, made with all of the fresh produce available this time of year. This week, be sure to make a batch of paleo mayonnaise on your prep day since it is used in many of the dressings.
When I put this meal plan together, I realized that it includes both leg of lamb and lobster. The lobster was actually a Father’s Day treat so, if you aren’t feeling indulgent, simply sub another fish or meat to go with the salad. I cooked the lamb on a cooler day. It turned out great and was so easy. The tostadas are a definite favorite—I could eat Mexican every day of the week! And I am so excited about the paleo poppy seed dressing on the strawberry salad. Well, as excited as one can get about salad dressing, I suppose. I do love a good strawberry salad and now I don’t have to skip the dressing–this one is simple and SO good. I also have to give the hot wings a mention. I put them on the dinner plate instead of as an appetizer and they were gone in a flash. Even my kids liked them!
