Are you enjoying the hustle and bustle of the holiday season? Here in Chicagoland, we’ve got no snow. In fact, the weather’s been pretty balmy these last few days (for December, that is). I’m ready for a white Christmas! About 90 percent of my holiday decorating is done and, for the first time in 9 years, I ordered photo cards instead of making my own. I love crafting and card making, but it was an easy way for me to reduce some stress. I took my own photo of the kids this year that I think turned out pretty good. I got a new fancy camera as an early Christmas gift from my awesome hubby so look forward to some revamping of my old, crappy photos. I’m so excited to learn what my new camera can do! I have not started my shopping yet…but I have been enjoying some great time in the kitchen!
This week’s meal plan includes some great comfort foods, from gumbo to taco casserole to turkey meatloaf. These meals should provide plenty of leftovers for some quick and easy lunches (or breakfasts). I am very proud of the acorn squash with savory sausage custard recipe. The filling is so rich and creamy, you would actually think there’s cheese in it! And I have to give the spicy shrimp and bok choy a mention as a quick and tasty weeknight meal. It’s so easy and SO good!
