Are you caught up in preparations for the CrossFit Open? With less than two weeks left to prepare, many people are really watching what they eat. One of the many benefits I’ve seen since adopting the paleo lifestyle is increased energy and strength and quicker muscle recovery. Let’s face it, the competition is only getting tougher. I don’t know anyone who can’t use a little extra help!
This week’s meal plan offers some great options for keeping you on track. The Crock Pot Honey Sesame Chicken tastes great, is so easy to make, and will likely leave you with plenty of leftovers for lunches. Chili Dog Casserole tastes just like it sounds—and who doesn’t like a good chili dog? Magical Chicken Legs and Sweet Potato Fries make a nice, quick weeknight meal to please the whole family. Why is the chicken magical? Well, for one, because everyone (i.e., my picky children) will eat it with no complaints. And secondly, they are named after the chicken legs enjoyed by the famous wizards in the Harry Potter movies (our latest favorite). The Prosciutto-Stuffed Pork Tenderloin with Mushroom Sauce was a huge hit. It is a little more time-consuming to make, but still doable for a weeknight when friends are coming over or for a special weekend meal. Well worth the effort. And the Brussel Sprouts are a perfect complement to the pork. We finished the week off with another crock pot meal: Mu Shoo Beef. It is so simple to make and SO good. Especially with the addition of an easy-to-make Paleo Hoisin Sauce—a great building block recipe to add to your favorites.

Just started thinking about making dinner when I realized that the ingredients for the Brussel Sprouts aren’t on the grocery list! I should pay more attention to the recipes when I shop – bummer!
