<p>My friend Nicki from <a href="http://crossfitfreedom.com/">CrossFit Freedom</a> passed along a two-ingredient cookie recipe to me recently. It consisted of bananas and oats, and Nicki wanted me to make it paleo. I thought about different ways to get a great flavor, but still have some of that oat-y consistency. I ended up pulsing almonds in my food processor until they formed a flour with some chunks of nutty goodness. When I mixed it with the bananas, it was clear I needed something to absorb the liquid from the mashed banana, so I just added a touch of coconut flour. That fixed it right up. There&#8217;s no excuse NOT to make these cookies. They are so good and super fast to make. I have made two batches of these so far and after sharing a batch with Nicki, she gave them the big thumbs up and ensured me that they freeze well, too. Thanks, Nicki!</p>
<p>Oh, I added some cinnamon and chocolate chips to my batches, just because I have a hard time letting things be so simple. You can choose to add these, leave them out, or add some dried fruit or nuts instead. The fruit and nuts would turn these into a great breakfast cookie. Enjoy!</p>

<p>More than you wanted to know? Well, let&#8217;s get to the good stuff then. Read on for a great recipe inspired by my friend Cesar. He&#8217;s not Greek or Turkish, at least that I&#8217;m aware of, but he does make some mean dolmas. He brings these to church sometimes to share after our service. While Cesar&#8217;s dolmas are stuffed with rice and lamb, I use cauliflower rice. I think he&#8217;ll be proud. <img src='http://paleotable.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  I thought this recipe would be perfect to share for the upcoming Greek Easter.</p>

<p>These dolmas are easy to put together, but it does take some time to roll up these tiny packages of goodness. Dolmas are excellent party fare not only because they taste awesome and easy to handle, but they can be made in advance and refrigerated. They could probably also be frozen, but I havent&#8217; tried that yet. Enjoy!</p>

<p><em>I am a huge researcher when it comes to the foods we consume and the products we use. Over the years, I&#8217;ve tried a lot of great products and many that weren&#8217;t so good. I thought I&#8217;d stop keeping this info all to myself and do a little sharing. This is my first product review, but not my last. I plan to share some other products in future <span style="color: #99cc00;"><strong>Try This</strong></span> posts. Hope you like it!</em></p>
<p>I have been on a quest for the perfect olive oil for a long, long time. Even prior to adopting the paleo lifestyle, I loved to taste the variety of olive oils offered at our local olive oil store. There are SO many oils to choose from, and with these choices comes a huge variety of flavors. Some subtle and some not so subtle. I have tasted many oils that have quite a bitter bite to them, some that are very smooth and easy, and some that have quite a neutral taste with no finish at all. Well, my quest for the perfect olive oil is over! Kasandrinos olive oil is amazing! It is full bodied, but not bitter. Olivey but smooth. I could literally drink the stuff all on its own!</p>
<p>The Kasandrinos family grows their olives organically in Niata, Greece. The olives are hand picked and cold-pressed within 48 hours of harvest. The quality of their preparation process is evident it the flavor of this amazing oil.</p>

<p>So, every recipe has a story, right? This recipe is dedicated to my <a href="http://crossfitfreedom.com/">CrossFit Freedom</a> friend, Sarah. She has always been a huge Paleo Table supporter and is always ready to try out my new recipes and give me feedback—especially treat and bar recipes because, let&#8217;s be honest, who doesn&#8217;t like a good treat? I love the fact that Sarah makes my <a href="http://paleotable.com/2012/10/sweet-potato-recovery-bar/">Sweet Potato Recovery Bars</a> on a regular basis, and that her kids are even fans! That&#8217;s more than I can say for my own!</p>
<p>Recently Sarah confessed her addiction to Lara Bars and asked me to come up with recipes for her favorite flavors so she could make them at home. She supplied me with the list of her top three flavors, along with their ingredients from the packages. I typically don&#8217;t buy bars for myself, simply because making my own is so easy and I like to customize them to suite my tastes. However, I did go pick up the three flavors Sarah requested so I could taste them for myself.</p>
<p>For this recipe, I added a touch of vanilla to the ingredient list for a warm, creamy flavor.  I also formed the mixture into truffles instead of bars. The shape is not only easy to eat and transport, but it&#8217;s also a great way to control your portion size. I am usually not a calorie counter, but for this recipe I figured out that with 16 servings, each truffle is 116 calories with 10 grams of sugar (from the dates). If you prefer to form this mixture into bars, simply press it into a pan, refrigerate until set, then cut and wrap them.</p>
<p>Not to toot my own horn, but these truffles turned out great&#8230;REALLY great. They not only got two big thumbs up from Sarah, but my daughter Aly liked them, too! And I can&#8217;t forget to mention Ian, Sarah&#8217;s partner in Lara bar addiction, who, after trying a sample, posted in a Cookie Monster kind of way on my Facebook wall: &#8220;Those coconut cream pie truffles were amazing!!!! Need more!!!! nom nom.&#8221;</p>

			<content:encoded><![CDATA[<p>I hope you have been enjoying a week of clean eating. Here are some great meals to help keep you on track. There is no need to serve up boring or tasteless meals when you are living the paleo lifestyle. These recipes are YUMMY! Not too long ago, I posted the Cashew Chicken recipe, but it deserves an encore, so you&#8217;ll see it again in this meal plan. One of my favorites, for sure! I am a big fan of lettuce wraps, so when we recently got two heads of butter lettuce in our <a href="https://www.doortodoororganics.com/">Door-to-Door Organics</a> box, I knew just what to make: Chipotle Chicken Lettuce Wraps. And just to make efficient use of the organic chicken I bought in bulk at Costco (a great way to buy chicken if you are on a budget), I made some amazing Enchiladas Verdes. I revamped my original recipe by using collard greens instead of coconut wraps. Not only are they more readily available, they pack a great nutritional punch, and they can withstand the heat of the oven. Collard greens are now my new favorite wrapper!</p>
<p>The Slow-Roasted Beef Brisket is AMAZING! It is my second attempt at making brisket (my first was an epic failure). This brisket is super easy, melt-in-your-mouth, finger-licking good! I HIGHLY recommend making it in the very near future. And it was even better with a simple side of Cauliflower Mash. They taste so much like mashed potatoes, it&#8217;s crazy!</p>
<p>We rounded out the week with a revised version of Taiwanese Pork. I made this dish a while back and I don&#8217;t remember it being a super star. Well, times have changed with this new version. It is quick, easy, and delicious. Give it a try with any ground meat you have on hand. The spices are so good!</p>

Well, if you are me, you take advantage of your time at home and slow roast a beef brisket. I&#8217;ve had this brisket in the freezer for a while now. The first brisket I made was a disaster. It was when we first got our smoker and were just getting things figured out. After smoking the brisket all day, we ended up with a shrunken, overcooked, tough piece of meat. SO not worth the effort of keeping the smoker going all day. (I know many people successfully smoke brisket all the time, I&#8217;m just not one of them.)</p>
<p>This time, I decided to go with a method similar to the one I use for ribs, low and slow in the oven. I seasoned the brisket overnight in the refrigerator and then added Worcestershire sauce before cooking. To ensure I didn&#8217;t overcook the meat, I checked on it after 3 hours and continued to check until the meat easily pulled apart. My 5-pound brisket was tender in 4 hours, after which I added barbecue sauce and roasted it for another hour. For this recipe, you can use homemade barbecue sauce, but I used Bone Suckin&#8217; Sauce, <span style="font-size: 16px;">my favorite paleo-friendly jarred sauce.</span></p>
<p>This brisket was SO, SO good! It reminded me of melt-in-your-mouth ribs, but with a lot more meat. This recipe is simple and delicious. If you are going to be home for the day, plan ahead and start this the night before. Take your comfy belly meal one step further and add some easy Cauliflower Mash to your plate. You&#8217;ll love it!</p>

Between us, Dave and I ate the entire pound of pork, so if you are feeding a crowd, double the recipe. This is a quick and easy weeknight meal that could easily become part of your normal rotation. <p>Well, after getting great results using collard greens to wrap some cabbage rolls, I knew I had to try them with my enchilada recipe. For my original post in Meal Plan 26, I used <a href="http://www.benefityourlifestore.com/product_info.php?ref=6&amp;products_id=510&amp;affiliate_banner_id=1"> Pure Wraps</a> coconut wraps. They were great! The wraps come raw and do not do well at high temperatures, so I warmed up the filling first, then wrapped the enchiladas and baked them for only 5 minutes at 350ºF. The collard greens can withstand the heat, so I modified the recipe so that the insides do not require preheating.</p>
<p>The sweet potato mixed with paleo mayonnaise and coconut milk gives these a nice, creamy texture. They were so good, we didn&#8217;t even miss the cheese! The salsa verde is from scratch because I couldn&#8217;t find a clean one at the grocery store. If you can, feel free to substitute. But if not, this one is very easy and can be done at the same time you are making the filling. I made this recipe in the morning, poured on the salsa verde, and refrigerated it until I was ready to cook. It turned out perfect! Give it a try and let me know what you think!</p>

<p>Well, after making Cashew Chicken last night, I couldn&#8217;t wait to share the recipe. You&#8217;ll see it again in my upcoming Meal Plan 50, but after you try it, you&#8217;ll see why I couldn&#8217;t wait. What really convinced me to post today is my children&#8217;s response to this meal. So, let me set the scene: Josh has been sick for several days so he and I have been cooped up in the house and he has not been eating much. Aly has been doing everything in her power to get Josh&#8217;s virus so she can miss school, too. Nice, huh?</p>
<p>Since I have not been to the grocery store in a while, I checked out my pantry and freezer to see what I had to work with. I&#8217;ve made this recipe several times over the past few weeks so I was happy to be able to thaw out some chicken thighs and make this quick meal with what I had on hand. And thanks to <a href="http://www.doortodoororganics.com/">Door to Door Organics</a>, I had a head of cauliflower to make the rice with. (I LOVE the convenience of home produce delivery, especially in times like this when I can&#8217;t get to the store. I just placed my order for this week—it&#8217;s awesome!)</p>
<p>Anyway, back to my story. I was excited to be able to whip together what has recently become one of my favorite quick meals.  As I was finishing the chicken, Aly posed the typical question, &#8220;What are the KIDS having for dinner?&#8221;</p>
<p>&#8220;Cashew chicken.&#8221; I responded.</p>
<p>&#8220;No, I <em>said</em> the KIDS,&#8221; repeated Aly.</p>
<p>&#8220;Cashew chicken, and you&#8217;re going to love it!&#8221;</p>
<p>I got the typical overjoyed visual response (all you parents out there know exactly what I mean)&#8230;and then Josh walked by the stove. &#8220;Hey, Mom, is that like Chinese?&#8221;</p>
<p>&#8220;Yup.&#8221;</p>
<p>&#8220;Can I try a piece?&#8221; he said. And while Josh tried it and declared the chicken to be good, I plated dinner and placed it on the table.</p>
<p>Fast forward about 8 minutes and I see Aly silently sneaking over to the stovetop and refilling her bowl with more chicken. I was cracking up that she went to such measures in her attempt to keep me from knowing that she actually LIKED  it!</p>

Well, I keep on trying anyway, hoping that I can add to the very short list of healthy foods that they actually enjoy. These brownies are simple to make and uses a short list of ingredients. If you don&#8217;t mind a more coconutty flavor, you can substitute coconut oil for the palm shortening. This treat contains more sweetener than I usually use. I added just a touch of honey on top of the coconut sugar to balance the bitterness of the cacao. I also added in chocolate chips to entice my children, although I think the brownies are plenty chocolatey without them. After tasting the final product, I realized that they actually weren&#8217;t a kid&#8217;s treat at all, but more of an adult-friendly flourless dark chocolate cake bite. They would go well with coffee, tea, or a glass of wine. Or even some almond milk. Next time I might try adding just a little more palm shortening to increase the moisture. I would love to hear what you think of these!</p>

I continue to search for satisfying alternatives, and have found a couple of teas that have worked well. But usually, to really get the flavor I want, my paleo replacements require quite a bit labor and sometimes a large amount of honey to sweeten them up. Well, I recently tried Starbuck&#8217;s vanilla rooibos parfait tea. You can get it hot at Starbuck&#8217;s, or if you&#8217;re lucky, they&#8217;ll have the boxes of full-leaf sachets in stock and you can make it at home. The ingredient list is simple: rooibos, licorice root, blackberry leaves, cinnamon, apple pieces, peach pieces, vanilla extract, chamomile flowers. I recognize all of the ingredients, and they&#8217;re all good!</p>
<p>Kudos to Starbuck&#8217;s for keeping their tea clean. I also enjoy their passion tea, wild sweet orange, and refresh (mint) teas. I have checked the web sites of a couple of the bigger loose-leaf tea sellers (I won&#8217;t mention any names) to see exactly what they put in their herbal teas. I&#8217;ve got to say that it floors me when something that is supposed to be healthy is pumped full of sugar and artificial flavors. It&#8217;s tea, after all. Do you really have to add all that crap?</p>
<p>I really like Starbuck&#8217;s vanilla rooibos parfait tea straight up, but when I&#8217;m in the mood for something warm and creamy, I punch it up with a <em>little</em> bit of honey, cinnamon, and coconut milk. If you are looking for a yummy drink that won&#8217;t make you hang your head in shame (okay, maybe that&#8217;s a little over-exaggeration, but you know what I mean), give this drink a try and let me know what you think. All quantities are to taste so play with them and find what&#8217;s right for you. Enjoy!</p>

<p>With just a few days left until one of the most important Christian holidays of the year, I thought I&#8217;d share the foods that will be gracing our dinner table. Our holiday foods have evolved over time and now they rarely fluctuate from year to year.</p>
<p>Easter is a formal dinner at our house, with ham, roasted asparagus, cashew salad, fruit salad, mashed potatoes (a primal indulgence), and, of course, carrot cake! The quality of our ham has definitely gone up since we started the paleo lifestyle a couple of years ago. Now I make sure that it&#8217;s nitrate-free and contains no undecipherable additives. The potatoes may seem like a strange addition to this meal, but we only have them on holidays and they are my favorite! These recipes can either be made in advance or are very easy to prepare before your guests arrive so that you, too, can enjoy your day. I hope these dishes help to inspire your fuss-free paleo Easter menu. Have a happy, healthy, and blessed Easter!</p>

Use as much or as little fruit as you want. You can put in whatever fruit is on sale. Just be sure to clean it first. This is a great sweet side for the kids who are not big fans of their vegetables. I also like it for dessert!</p>
